Server oysters with a dressing made of: 1/2 dl red wine vinegar, 1 tablespoon finely chopped shallot, ¼ teaspoon white pepper. (This dressing makes 6 oysters)
Main course: Salmon Ceviche (2 servings)
300 g fresh salmon fillet into large cubes
1.5 tbsp freshly squeezed lime juice

Place the salmon cubes in a bowl.
Mix lime juice, red chilli, olive oil, salt, pepper and sugar into a dressing and pour it over the leek cubes.
Let the fish “cook” in the marinade for 10 minutes.
Mix the cherry tomatoes, avocado, and cucumber

Dessert: Walnut Cookies
3 egg whites
50 g Tagatesse
½ teaspoon salt
250 g walnuts
100 g dark chocolate
1 red chili
set the oven to 175 degrees
Have the egg whites in a bowl and whisk into Tagatesse little by little , plus the salt, Use a mixer, so that you get a fairly thick meringue
