Quinoa and kale salad

Approx. 2 servings

You need:

  • 1dl quinoa (uncooked)
  • 80g kale leaves (without stem)
  • 6 cherry tomatoes
  • 1 handful pumpkin seeds
  • 1/2 or 1 avocado

Dressing:

  • 2 tablespoons lime juice or lemon juice
  • 1 tbsp olive oil
  • 0.25 tsp sea salt

To do this:

  • Rinse and cook quinoa as directed on the package.
  • Cut away the stalks on the kale. Cut up the kale leaves in smaller pieces. Steam the kale leaves in approx.5min, you can use the steamer or the use of a regular pot with a little water in the middle. Bring to a boil under the lid until most of the water has evaporated and to the the kale becomes soft.
  • Part cherry tomatoes in the boats. Part avocados in half and then in the boats.
  • Mix the paste or lemon juice, olive oil and salt.
  • Mix in all the ingredients and serve.
